1/2 cup protein powder (vanilla or your favorite flavor)
1 tsp ground cinnamon
1/4 tsp nutmeg (optional)
1 cup grated carrots (about 2 medium carrots)
1/4 cup honey or maple syrup
1/2 cup nut butter (peanut, almond, or sunflower)
1/4 cup raisins or chopped nuts
1/4 cup shredded coconut (optional)
In a medium bowl, mix the rolled oats, protein powder, cinnamon, and nutmeg.
Stir in the grated carrots, honey, and nut butter until well combined.
Add the raisins (or nuts) and shredded coconut, folding everything together until it sticks nicely.
Scoop out about a tablespoon and roll into a ball. Repeat until all the mixture is used.
