1 cup cottage cheese
4 large eggs
1/2 cup shredded cheese (cheddar or mozzarella)
1/4 cup diced bell peppers
1/4 cup chopped spinach
Salt and pepper to taste
1/4 teaspoon garlic powder (optional)
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the cottage cheese and eggs. Whisk until smooth.
Add in the shredded cheese, diced bell peppers, chopped spinach, garlic powder, and salt & pepper. Fold gently.
Grease a muffin tin and pour the egg mixture into each cup, filling them about 3/4 full.
Bake for about 20-25 minutes, or until the tops are golden and the egg is set.
Let them cool for a few minutes before removing. Enjoy warm or store for later.
