1 pound ground beef
2 medium zucchinis, sliced
1 small onion, chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 cup shredded cheddar cheese
1 teaspoon Italian seasoning
Salt and pepper to taste
1 tablespoon olive oil
1 cup ricotta or cottage cheese (optional for a creamier texture)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until soft and fragrant (about 3-5 minutes).
Add the ground beef to the skillet, stirring until cooked through. Drain any excess fat.
Stir in the sliced zucchini, followed by the diced tomatoes. Mix in the Italian seasoning, salt, and pepper. Let it simmer for about 5-7 minutes.
In a baking dish, layer half of the beef-zucchini mix. Drop spoonfuls of ricotta or cottage cheese (if using) and add half of the cheddar cheese. Repeat with the remaining mixture.
