1 cup oats
½ cup vanilla protein powder
¼ cup almond butter (or your favorite nut butter)
¼ cup honey or maple syrup
½ cup crushed freeze-dried strawberries
2 tablespoons cream cheese (softened)
1 teaspoon vanilla extract
A pinch of salt
Instructions
In a large bowl, combine oats and protein powder. Give it a little stir to mix them well.
Add in the almond butter, honey (or maple syrup), crushed freeze-dried strawberries, softened cream cheese, vanilla extract, and salt. Mix it all together until you get a sticky mixture that holds together.
If your mixture feels too dry, add a splash of water or more honey. If too sticky, sprinkle a bit more oats.
Once combined, roll the mixture into small balls, about the size of a tablespoon. Place them on a baking sheet lined with parchment paper.
