1 cup fresh strawberries, hulled and sliced
1 cup freshly squeezed lemon juice (about 4–6 lemons)
1 cup granulated sugar (or adjust to taste)
4 cups cold water
Ice cubes
Fresh mint leaves for garnish (optional)
In a medium saucepan, combine the strawberries and sugar. Stir and let sit for 15 minutes to macerate.
Add 1 cup of water to the saucepan and bring the mixture to a simmer over medium heat. Once simmering, let cool.
Strain the mixture into a pitcher using a fine mesh strainer, pressing the strawberries to extract juice. Discard the solids.
Add freshly squeezed lemon juice and remaining 3 cups of cold water to the pitcher. Stir and adjust sweetness if needed.
Serve over ice and garnish with fresh mint leaves.
