1 lb boneless, skinless chicken breasts, diced
2 medium zucchinis, sliced
1 bell pepper, diced
1 cup corn (frozen or fresh)
1 can black beans, drained and rinsed
1 packet taco seasoning
2 tablespoons olive oil
Salt and pepper to taste
Fresh cilantro, for garnish
Optional toppings: avocado, cheese, sour cream
Instructions
In a large skillet, heat the olive oil over medium-high heat.
Add the diced chicken and season with salt, pepper, and half of the taco seasoning. Cook until the chicken is browned and cooked through, about 6-8 minutes.
Add the sliced zucchini, bell pepper, corn, and the remaining taco seasoning to the skillet. Stir everything together and cook for another 5-7 minutes until the veggies are tender but still crisp.
